How can I tell Richard he's in my way in the kitchen when he cooks like this?!?! :) :) I wish he would cook every weekend! :) Yes, he created this recipe on his own. He says that he tasted this food in a restaurant, then experimented with ingredients at home to re-create the dish.
1 1/2 cups brown rice (cook 'til tender)
2 cans black-eyed peas (drain some of liquid)
2 cups finely chopped broccoli
1 cup chopped mushrooms
1 can petite diced tomatoes
1 medium onion
snow peas (he didn't say how many he used...hmm...make a logical guess I suppose)
1 large carrot (shredded)--add at very end
3T Olive oil
2T soy sauce
1T cilantro (dried, not fresh)
1t garlic flakes
1t soup & vegetable seasoning (he used Watkins, of course)
His instructions: Saute' onion & broccoli (& garlic) in olive oil 'til semi-tender. Add mushrooms and saute' for few more minutes. Add rest of ingredients and simmer for 5 minutes. Add carrots 1 minute before done. Serve over rice.
